  • 4 cups chicken broth
  • 2 inches fresh ginger, sliced
  • 4 scallions, chopped
  • 2 cloves garlic, minced
  • 3 cups egg noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ginger and garlic, cooking until fragrant.
  2. Add chicken thighs and sear until golden brown on both sides.
  3. Pour in chicken broth and soy sauce, then bring to a simmer.
  4. Cook the chicken until fully cooked, about 15 minutes.
  5. Remove chicken, shred, and return to the pot.
  6. Add noodles and cook according to package instructions.
  7. Stir in scallions, sesame oil, and adjust seasoning with salt and pepper. Serve hot.
