Bacon Cheddar Gnocchi Soup

A creamy soup filled with the comforting flavors of bacon and cheddar, combined with gnocchi for a hearty meal.

  • 6 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound gnocchi
  • 1 cup cheddar cheese, shredded
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, heat olive oil and sauté onion and garlic until translucent.
  3. Add chicken broth and gnocchi; cook until gnocchi float to the surface.
  4. Stir in cheese and heavy cream until melted and combined.
  5. Add chopped bacon, salt, and pepper.
  6. Serve hot.

Notes

  • This soup is best served fresh but can be refrigerated for up to 3 days.
