Bacon Egg and Cheese Breakfast Quesadillas

A delicious twist on a classic breakfast, featuring turkey bacon, eggs, and melty cheese wrapped in a crispy quesadilla.

Ingredients

  • 4 large eggs
  • 4 slices turkey bacon
  • 1 cup shredded cheddar cheese
  • 4 flour tortillas
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the turkey bacon in a skillet over medium heat until crispy. Remove and set aside.
  2. In the same skillet, whisk the eggs, season with salt and pepper, and scramble until cooked through.
  3. Lay a tortilla in the skillet, spread half of it with the scrambled eggs, crumbled turkey bacon, and cheese.
  4. Fold the tortilla and cook until golden brown on both sides.
  5. Repeat with remaining tortillas and ingredients.
  6. Cut into wedges and serve warm.

  • For a spicy kick, add jalapeños to the filling.
