Baked Eggs Napoleon

  • 4 eggs
  • 4 slices turkey bacon
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh herbs (such as basil or parsley)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
  3. In a baking dish, layer the ricotta cheese at the bottom.
  4. Sprinkle with half of the mozzarella cheese and half of the chopped herbs.
  5. Carefully crack the eggs on top, then top with remaining bacon and herbs.
  6. Season with salt and pepper, then sprinkle with the rest of the mozzarella cheese.
  7. Bake for 15-20 minutes, until the eggs are set to your liking.
  8. Remove from oven and let cool for a few minutes before serving.
