Blackberry Velvet Gothic Cake

A rich and decadent treat that combines the flavors of blackberries and velvet cake.

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blackberries
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix the flour, sugar, cocoa powder, baking soda, and salt.
  3. Add the buttermilk, vegetable oil, eggs, and vanilla to the dry ingredients and mix until combined.
  4. Gently fold in the blackberries.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  8. Whip the heavy cream with powdered sugar until soft peaks form.
  9. Once the cakes are cool, frost with the whipped cream and decorate with additional blackberries if desired.

  • For extra flavor, consider adding a splash of blackberry liqueur to the cake batter.
