Blueberry Breakfast Quesadilla

This blueberry breakfast quesadilla combines sweet blueberries with gooey cheese for a delicious and easy breakfast option.

Ingredients

  • 1 cup fresh blueberries
  • 2 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons honey
  • 1 teaspoon cinnamon
  • 1 tablespoon butter

Instructions

  1. Heat a skillet over medium heat and add butter.
  2. Place one tortilla in the skillet, then sprinkle half of the cheese on top.
  3. Add blueberries and drizzle honey over them.
  4. Top with the remaining cheese and place the second tortilla on top.
  5. Cook until the bottom is golden brown, about 2-3 minutes, then carefully flip and cook the other side until golden and the cheese is melted.
  6. Remove from skillet, slice into wedges, and serve warm.

Notes

  • For a richer flavor, add a pinch of nutmeg.
  • Serve with a dollop of yogurt or whipped cream.
