Chicken Burrito Casserole

A delicious and hearty chicken burrito casserole that combines all your favorite burrito ingredients into one easy dish.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 2 cups salsa
  • 1 cup shredded cheese
  • 6 tortillas, cut into strips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, rice, black beans, corn, taco seasoning, and salsa.
  3. In a greased casserole dish, layer half of the tortilla strips.
  4. Add the chicken mixture on top, then sprinkle with cheese.
  5. Layer the remaining tortilla strips and top with more cheese.
  6. Bake for 25-30 minutes until heated through and cheese is bubbly.
  7. Remove from the oven and let cool for a few minutes before serving.

Notes

  • This casserole can be made ahead of time and stored in the refrigerator for up to 2 days before baking.
  • Feel free to add your favorite toppings such as sour cream or avocado when serving.
