Chicken Enchiladas

A delicious recipe for chicken enchiladas that are easy to make and packed with flavor.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup diced onions
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded chicken, diced onions, and half of the enchilada sauce.
  3. Take a corn tortilla, fill it with the chicken mixture, roll it up, and place it seam-side down in a baking dish.
  4. Repeat with the remaining tortillas and chicken mixture.
  5. Pour the remaining enchilada sauce over the top and sprinkle with cheese.
  6. Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden.

Notes

  • Serve with extra cilantro and sour cream on the side.
  • For added flavor, add black beans or corn to the filling.
