  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups frozen peas
  • 3 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté onions, carrots, and celery until tender.
  2. Add garlic and cook for an additional minute.
  3. Stir in the flour, thyme, salt, and pepper; cook for another minute.
  4. Add the chicken broth and chicken breasts; bring to a boil and then simmer until the chicken is cooked through.
