  • 2 cups carrots, diced
  • 2 cups celery, diced
  • 1 cup potatoes, diced
  • 4 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup turkey bacon, cooked and crumbled
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 cup heavy cream
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion and garlic; sauté until translucent.
  3. Stir in carrots, celery, and potatoes. Cook for 5 minutes.
  4. Add chicken broth, shredded chicken, and turkey bacon. Bring to a boil.
  5. Reduce heat, add thyme and rosemary, and simmer for 15 minutes.
  6. Stir in heavy cream, and season with salt and pepper.
