  • 1 pound chicken breast, diced
  • 4 slices turkey bacon, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups potatoes, cubed
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crisp. Remove and set aside.
  2. In the same pot, add diced chicken and cook until browned, about 5 minutes.
  3. Add carrots, celery, onion, and garlic; sauté for another 5 minutes.
  4. Stir in chicken broth, potatoes, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and let simmer for 20 minutes until potatoes are tender.
  6. In a small bowl, mix flour with heavy cream until smooth. Stir into the soup and let thicken for 5 minutes.
  7. Add frozen peas and the cooked turkey bacon back into the pot, stir well and serve hot.

Notes

  • For a thicker soup, add more flour and cream mixture.
  • You can substitute chicken with leftover turkey for more flavor.
