- 1 pound chicken breast, diced
- 4 slices turkey bacon, chopped
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups potatoes, cubed
- 1 cup frozen peas
- 1 cup heavy cream
- 2 tablespoons all-purpose flour
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, cook the turkey bacon over medium heat until crisp. Remove and set aside.
- In the same pot, add diced chicken and cook until browned, about 5 minutes.
- Add carrots, celery, onion, and garlic; sauté for another 5 minutes.
- Stir in chicken broth, potatoes, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and let simmer for 20 minutes until potatoes are tender.
- In a small bowl, mix flour with heavy cream until smooth. Stir into the soup and let thicken for 5 minutes.
- Add frozen peas and the cooked turkey bacon back into the pot, stir well and serve hot.
Notes
- For a thicker soup, add more flour and cream mixture.
- You can substitute chicken with leftover turkey for more flavor.
