Ingredients

  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup diced potatoes
  • 1 cup frozen peas
  • 1/2 cup turkey bacon, chopped
  • 1/4 cup all-purpose flour
  • 2 cups cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy.
  2. Remove the bacon and set aside, leaving the drippings in the pot.
  3. Add carrots, celery, and potatoes, and sauté for about 5 minutes.
  4. Stir in the flour and cook for another minute.
  5. Add chicken broth gradually while stirring, then bring to a boil.
  6. Reduce heat and stir in cream, peas, thyme, salt, and pepper.
  7. Add the cooked turkey bacon back into the soup.
  8. Simmer for 10 minutes until thickened.
