- 1 lb skinless chicken breasts
- 4 slices turkey bacon
- 2 cups carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup frozen peas
- 2 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups pie crust, cubed
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the leftover bacon fat, sauté onions, carrots, and celery until soft.
- Add garlic and thyme, cooking until fragrant.
- Stir in the chicken broth and bring to a boil.
- Add the chicken and cook until fully cooked. Shred the chicken and return it to the pot.
- Stir in the heavy cream and peas, cooking until heated through.
- Add the cubed pie crust and allow to simmer for a few minutes before serving.
