  • 1 lb skinless chicken breasts
  • 4 slices turkey bacon
  • 2 cups carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen peas
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups pie crust, cubed

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the leftover bacon fat, sauté onions, carrots, and celery until soft.
  3. Add garlic and thyme, cooking until fragrant.
  4. Stir in the chicken broth and bring to a boil.
  5. Add the chicken and cook until fully cooked. Shred the chicken and return it to the pot.
  6. Stir in the heavy cream and peas, cooking until heated through.
  7. Add the cubed pie crust and allow to simmer for a few minutes before serving.

Notes
