Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 pound cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup heavy cream
  • ½ cup frozen corn

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, garlic, carrots, and celery; sauté until softened.
  3. Stir in the shredded chicken and cook for a couple of minutes.
  4. Add chicken broth, peas, thyme, salt, and pepper; bring to a boil.
  5. Reduce heat and simmer for about 10 minutes.
  6. Stir in heavy cream and corn; cook for an additional 5 minutes.

  • For a thicker soup, add a slurry of cornstarch and water.
