Christmas Hawaiian Carrot Pineapple Cake

  • 1 cup crushed pineapple, drained

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix grated carrots and crushed pineapple.
  3. In another bowl, combine sugar, flour, baking powder, baking soda, and salt.
  4. Add the dry ingredients to the carrot mixture and mix well.
  5. In a separate bowl, whisk together oil, eggs, and vanilla.
  6. Combine the wet and dry mixtures, then fold in the walnuts.
  7. Pour the batter into a greased cake pan.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Let cool before serving.
