  • ½ cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix together the grated carrots, crushed pineapple, and shredded coconut.
  3. In another bowl, whisk together the flour, sugars, baking soda, baking powder, salt, and cinnamon.
  4. In a separate bowl, beat together the eggs, vegetable oil, and vanilla extract.
  5. Add the wet ingredients to the dry ingredients and mix until just combined.
  6. Fold in the carrot mixture until evenly distributed.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
