- 4 chicken breasts
- 6 ounces turkey bacon
- 2 large onions, sliced
- 4 cups beef broth
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- 1 cup shredded cheese (Swiss or Gruyère)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the turkey bacon until crispy. Remove and set aside.
- In the same skillet, add olive oil and sauté the onions until caramelized.
- Season chicken breasts with salt, pepper, garlic powder, and thyme.
- Add the chicken to the skillet and brown on both sides.
- Pour in the beef broth and bring it to a simmer.
- Transfer the skillet to the oven and bake for 25 minutes.
- Remove from the oven, top with cheese and crumbled bacon, and return to the oven until the cheese is melted.
Notes
- For extra flavor, add a splash of red wine to the broth.
- Serve with crusty bread to soak up the broth.
