  • 1 teaspoon black pepper
  • Salt to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the chuck roast with salt and pepper.
  3. In a large oven-safe pot, heat olive oil over medium-high heat, sear the roast on all sides until browned.
  4. Remove the roast and set aside. In the same pot, add onions and garlic, sauté until softened.
  5. Stir in the beef broth, French onion soup, Worcestershire sauce, thyme, and pepper.
  6. Return the roast to the pot, cover, and cook in the oven for 3-4 hours or until the meat is tender.
  7. Serve with pan juices.
