Comforting Thai Potsticker Soup

Ingredients

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 4 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 2 cups potstickers, frozen or fresh
  • 1 cup bok choy, chopped
  • 2 green onions, sliced
  • 1/4 cup cilantro, chopped

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until fragrant.
  3. Pour in chicken broth, soy sauce, and fish sauce. Bring to a boil.
  4. Add potstickers and bok choy. Simmer until potstickers are cooked through.
  5. Stir in lime juice and garnish with green onions and cilantro before serving.
