1 cup cottage cheese
1 cup grated carrots
1/2 cup honey
1/2 cup whole wheat flour
1/4 cup almond meal
2 eggs
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1/2 cup chopped walnuts
Instructions
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine the cottage cheese, grated carrots, honey, and eggs.
In another bowl, whisk together the whole wheat flour, almond meal, baking powder, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet mixture and stir until combined.
Fold in the chopped walnuts.
Pour the batter into a greased baking dish and spread evenly.
Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Let cool before cutting into bars.
