Cottage Cheese Chicken Enchiladas

Cottage cheese chicken enchiladas are a delicious and comforting meal that is easy to prepare and perfect for any occasion.

  • 2 cups cooked, shredded chicken
  • 1 cup cottage cheese
  • 1 cup shredded cheese
  • 1 cup enchilada sauce
  • 8 corn tortillas
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, cottage cheese, half of the shredded cheese, and seasonings.
  3. Soften the tortillas in the microwave for 30 seconds.
  4. Spoon the chicken mixture into each tortilla and roll them up.
  5. Place the rolled tortillas in a baking dish and top with enchilada sauce and remaining cheese.
  6. Bake for 20-25 minutes until heated through and cheese is bubbly.

Notes

  • For added flavor, sprinkle cilantro on top before serving.
  • These enchiladas can be made ahead and frozen before baking.
