  • 1 can black beans, rinsed and drained
  • 1 can sweet corn, drained
  • 2 ripe tomatoes, diced
  • 1 red onion, finely chopped
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 4 slices turkey bacon, cooked and crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • Salt to taste

Instructions

  1. In a large bowl, combine the black beans, corn, tomatoes, onion, bell pepper, avocado, and turkey bacon.
  2. In a separate bowl, whisk together the olive oil, lime juice, cumin, and salt. Pour the dressing over the salad.
  3. Gently toss to mix all ingredients and coat with the dressing.
  4. Serve immediately or chill in the refrigerator for 30 minutes for the flavors to meld.

Notes

  • For a spicier version, add diced jalapeño.
