- 1 can black beans, rinsed and drained
- 1 can sweet corn, drained
- 2 ripe tomatoes, diced
- 1 red onion, finely chopped
- 1 bell pepper, diced
- 1 avocado, diced
- 4 slices turkey bacon, cooked and crumbled
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 teaspoon cumin
- Salt to taste
- In a large bowl, combine the black beans, corn, tomatoes, onion, bell pepper, avocado, and turkey bacon.
- In a separate bowl, whisk together the olive oil, lime juice, cumin, and salt. Pour the dressing over the salad.
