Cream Of Mushroom Soup

A delicious and comforting cream of mushroom soup made with turkey bacon for a lighter twist.

  • 8 ounces turkey bacon
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 1 pound mushrooms, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons fresh thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. Add onions and garlic to the pot, sautéing until translucent.
  3. Add sliced mushrooms and cook until they are tender.
  4. Pour in the chicken broth and bring to a simmer.
  5. Stir in the heavy cream, thyme, salt, and pepper. Cook for an additional 10 minutes.
  6. Top with crumbled turkey bacon before serving.

Notes

  • This soup can be thinned with additional broth if desired.
  • For a vegetarian option, omit the bacon and use vegetable broth.
  • Can be made ahead and stored for later.
