  • 4 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Remove bacon and set aside, leaving the drippings in the pot.
  3. Add onions and garlic to the pot and sauté until soft.
  4. Stir in mushrooms and cook until they release their moisture.
  5. Pour in chicken broth and add thyme. Bring to a simmer.
  6. Reduce heat and stir in heavy cream. Simmer for an additional 10 minutes.
  7. Blend the soup until smooth using an immersion blender.
  8. Season with salt and pepper. Serve hot, garnished with crispy turkey bacon.
