  • 1 cup sour cream
  • 4 cups chicken broth
  • 1 cup enchilada sauce
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheese

Instructions

  1. In a large pot, sauté the diced onion and minced garlic until translucent.
  2. Add the shredded chicken, corn, cumin, chili powder, chicken broth, and enchilada sauce. Bring to a boil.
  3. Reduce heat and simmer for 20 minutes.
  4. Stir in the sour cream and half of the cheese, cooking until heated through.
  5. Serve hot, topped with remaining cheese.
