  • 2 cups cooked, shredded chicken
  • 1 can (10 oz) red enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 2 cloves garlic, minced

Instructions

  1. In a large pot, sauté the onions and garlic until fragrant.
  2. Add in the chicken, enchilada sauce, black beans, corn, cumin, chili powder, and chicken broth. Stir to combine.
  3. Bring to a simmer and let cook for 15 minutes.
  4. Stir in the heavy cream and cheddar cheese, and cook until the cheese is melted and the soup is heated through.
