Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup wild rice, rinsed
  • 4 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Place chicken, wild rice, broth, carrots, celery, onion, garlic, thyme, and rosemary in the crockpot.
  2. Cook on low for 6-8 hours or high for 3-4 hours until the chicken is fully cooked and rice is tender.
  3. Remove the chicken, shred it, and return it to the pot.
  4. Stir in the heavy cream and season with salt and pepper. Cook for an additional 30 minutes.
