  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon thyme
  • salt to taste
  • pepper to taste

Instructions

  1. In a slow cooker, combine chicken breasts, wild rice, chicken broth, carrots, celery, onion, garlic, thyme, salt, and pepper.
  2. Cook on low for 6-8 hours or until the chicken and rice are fully cooked.
  3. Remove the chicken, shred it, and return it to the pot.
  4. Stir in the heavy cream and fresh parsley before serving.
