Creamy Lasagna Soup

A creamy and delicious twist on traditional lasagna, this soup features turkey bacon for a lighter option.

  • 8 ounces lasagna noodles
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 4 cups chicken broth
  • 1 can (15 ounces) crushed tomatoes
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. Cook the lasagna noodles according to package instructions. Drain and set aside.
  2. In a large pot, cook turkey bacon over medium heat until crispy. Remove from pot and crumble.
  3. Add olive oil, onion, and garlic to the pot. Sauté until onion is translucent.
  4. Stir in Italian seasoning, chicken broth, and crushed tomatoes. Bring to a simmer.
  5. Add cooked noodles, ricotta cheese, mozzarella cheese, and crumbled turkey bacon. Cook until heated through.
  6. Stir in fresh basil before serving.

Notes

  • For a spicier version, add red pepper flakes.
  • Leftovers can be reheated on the stove over medium heat.
