CREAMY ROASTED GARLIC POTATO SOUP

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wrap the garlic head in aluminum foil and roast for about 30 minutes until soft.
  3. In a pot, heat olive oil over medium heat and sauté onions until translucent.
  4. Add diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
