Creamy Tomato Basil Soup

  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (28 oz) crushed tomatoes
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1/4 cup fresh basil, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and chop.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Add crushed tomatoes and vegetable broth, bring to a boil.
  4. Reduce heat and stir in heavy cream and chopped basil.
  5. Simmer for 15 minutes, then blend for a smooth consistency.
  6. Season with salt and pepper, and stir in the chopped bacon.
  7. Serve hot, garnished with fresh basil.
