- 8 slices turkey bacon
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups crushed tomatoes
- 2 cups vegetable or chicken broth
- 1 cup heavy cream
- 1 teaspoon dried basil
- Salt to taste
- Fresh basil for garnish
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot, add olive oil and sauté onion until translucent.
- Add garlic and cook until fragrant.
- Stir in crushed tomatoes and broth; bring to a simmer.
- Blend the soup until smooth, then return to pot.
- Stir in heavy cream and dried basil, and season with salt.
- Chop the reserved turkey bacon and add it back to the soup. Cook for a few more minutes.
- Serve hot, garnished with fresh basil.
