Creamy Tuscan Ravioli Soup

A comforting and creamy tuscan ravioli soup that makes for a perfect weeknight dinner.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (15 ounces) diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1 package (9 ounces) refrigerated ravioli
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, and sauté until the onion is translucent.
  3. Pour in the vegetable broth and diced tomatoes, then add the basil, oregano, and red pepper flakes.
  4. Bring to a boil, then add the ravioli and cook according to package directions.
  5. Stir in the spinach and heavy cream, and heat through.
  6. Serve hot, garnished with Parmesan cheese.

Notes

  • For a richer flavor, use homemade broth.
  • Feel free to add additional vegetables like bell peppers or mushrooms.
