- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can (15 ounces) diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 1 package (9 ounces) refrigerated ravioli
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, and sauté until the onion is translucent.
- Pour in the vegetable broth and diced tomatoes, then add the basil, oregano, and red pepper flakes.
- Bring to a boil, then add the ravioli and cook according to package directions.
- Stir in the spinach and heavy cream, and heat through.
