  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 avocado, diced
  • 1 cup sour cream

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Stir in the diced tomatoes, black beans, corn, vegetable broth, cumin, chili powder, and paprika. Bring to a simmer.
  4. Cook for about 15-20 minutes, allowing flavors to meld together.
  5. Serve hot, topped with diced avocado and a dollop of sour cream.
