- 2 cups beef broth
- 1 cup onion, chopped
- 6 cloves garlic, minced
- 2 dried guajillo chiles
- 2 dried ancho chiles
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cloves
- 2 bay leaves
- Salt and pepper to taste
- 10 corn tortillas
- 1 cup cilantro, chopped
- 1 lime, cut into wedges
- In a skillet, toast the dried chiles until fragrant, then soak them in hot water for 10 minutes.
- Blend the soaked chiles with garlic, onion, and spices until smooth.
- Place the chuck roast in a crock pot and pour the blended mixture over it.
- Add beef broth, and bay leaves.
- Cook on low for 8 hours until meat is tender.
- Shred the meat and serve in tortillas with cilantro and lime.
