  • 3 pounds chuck roast
  • 2 cups beef broth
  • 1 cup onion, chopped
  • 6 cloves garlic, minced
  • 2 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 2 bay leaves
  • Salt and pepper to taste
  • 10 corn tortillas
  • 1 cup cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. In a skillet, toast the dried chiles until fragrant, then soak them in hot water for 10 minutes.
  2. Blend the soaked chiles with garlic, onion, and spices until smooth.
  3. Place the chuck roast in a crock pot and pour the blended mixture over it.
  4. Add beef broth, and bay leaves.
  5. Cook on low for 8 hours until meat is tender.
  6. Shred the meat and serve in tortillas with cilantro and lime.

Notes

  • For extra flavor, marinate the meat overnight with the spices.
  • Adjust the heat by adding more or less chili powder.
