Crockpot Creamy Pumpkin Chili

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 can (15 ounces) pumpkin puree
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) diced tomatoes
  • 1 cup vegetable broth
  • 1 cup corn
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a skillet, cook the turkey bacon until crisp. Remove and chop into pieces.
  2. In the same skillet, brown the ground turkey until cooked through.
  3. In your crockpot, combine the pumpkin puree, beans, tomatoes, broth, corn, and spices.
  4. Add the cooked turkey and bacon to the crockpot, stirring to combine.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Serve hot, garnished with your favorite toppings.
