Delicious White Chicken Lasagna Soup

  • 1 pound boneless, skinless chicken breasts
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (15 ounces) diced tomatoes
  • 1 cup heavy cream
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chicken breasts and cook until browned, about 5-7 minutes.
  3. Remove the chicken, shred it, and set aside.
  4. Add the onions and garlic to the pot, cooking until the onions are translucent.
  5. Pour in the chicken broth and diced tomatoes, bringing to a boil.
  6. Stir in the heavy cream and broken lasagna noodles.
  7. Let it simmer until the noodles are cooked, about 10-12 minutes.
  8. Add the shredded chicken back to the pot along with the ricotta, mozzarella, and Parmesan cheeses, stirring until melted.
  9. Season with Italian seasoning, salt, and pepper to taste.
  10. Serve hot and enjoy!
