Easy Gingerbread Tiramisu

  • 1 cup brewed coffee
  • 1 cup gingerbread cookies, crushed
  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Prepare the coffee and let it cool.
  2. In a bowl, combine mascarpone cheese, heavy cream, sugar, vanilla, cinnamon, and nutmeg and whip until fluffy.
  3. Dip gingerbread cookies in cooled coffee and layer in a serving dish.
  4. Spread half of the mascarpone mixture over the cookies and repeat the layers.
  5. Chill for at least four hours before serving.
