  • 2 pounds ripe tomatoes
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups vegetable broth
  • 1 cup fresh basil leaves
  • 1 teaspoon balsamic vinegar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place tomatoes on a baking sheet and drizzle with olive oil. Roast for 20-25 minutes until caramelized.
  3. In a pot, heat olive oil over medium heat. Sauté onions until translucent. Add garlic and sauté for another minute.
  4. Add the roasted tomatoes to the pot along with salt, pepper, and vegetable broth. Simmer for 10 minutes.
  5. Stir in the fresh basil and balsamic vinegar. Blend the soup until smooth.
  6. Serve hot, garnished with extra basil if desired.
