Espresso Chocolate Chip Cookies

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup espresso chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In another bowl, combine the flour, baking soda, and salt; gradually mix into the creamed mixture.
  5. Fold in the espresso chocolate chips.
  6. Drop by rounded tablespoons onto ungreased baking sheets.
  7. Bake for 10-12 minutes or until edges are golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to wire racks.

Notes

  • For a stronger coffee flavor, add a tablespoon of espresso powder to the dough.
  • Store leftovers in an airtight container to keep them fresh.
