  • 8 ounces bowtie pasta
  • 4 slices turkey bacon
  • 1 cup butternut squash, cubed
  • 1 cup Brussels sprouts, halved
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the bowtie pasta according to package instructions, then drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy, then crumble it.
  3. Roast the butternut squash and Brussels sprouts at 400°F for 20-25 minutes.
  4. In a large bowl, combine pasta, roasted vegetables, turkey bacon, cranberries, pecans, and feta.
  5. In a separate bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.
  6. Pour the dressing over the pasta salad and toss to combine.
