Fall Lentil Shepherd's Pie

A hearty and delicious Fall Lentil Shepherd’s Pie perfect for cozy nights.

  • 1 cup lentils
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 tablespoon tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 4 cups mashed potatoes
  • 1/2 cup peas

Instructions

  1. Heat olive oil in a pan over medium heat. Add onion, carrots, and celery, and sauté until soft.
  2. Add garlic and mushrooms, cook until golden.
  3. Add lentils, vegetable broth, tomato paste, thyme, and rosemary. Simmer until lentils are tender.
  4. Stir in peas and mix well.
  5. Transfer the lentil mixture to a baking dish and top with mashed potatoes.
  6. Bake at 400°F (200°C) for 25 minutes or until golden brown.

Notes

  • Use leftover mashed potatoes for a quicker preparation.
  • Feel free to add any seasonal vegetables you have.
