- 1 pound chicken breast, diced
- 8 ounces orzo pasta
- 4 cups beef broth
- 1 large onion, sliced
- 6 slices turkey bacon, chopped
- 2 cups shredded cheese (Gruyère preferred)
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon thyme, dried
- Salt and pepper to taste
- Preheat the oven to 350°F (175°C).
- In a skillet, cook turkey bacon until crispy, then remove and set aside.
- In the same skillet, add olive oil and cook sliced onions until caramelized.
- Add garlic and thyme, cooking until fragrant.
- In a large bowl, combine chicken, orzo, beef broth, and the onion mixture. Season with salt and pepper.
- Transfer the mixture to a baking dish and top with cheese and crispy bacon.
- Bake for 25-30 minutes or until the orzo is cooked and the cheese is bubbly.
