French Onion Chicken Orzo Casserole

A comforting casserole that combines the flavors of French onion soup with chicken and orzo, enhanced with turkey bacon.

  • 1 pound chicken breast, diced
  • 8 ounces orzo pasta
  • 4 cups beef broth
  • 1 large onion, sliced
  • 6 slices turkey bacon, chopped
  • 2 cups shredded cheese (Gruyère preferred)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon thyme, dried
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook turkey bacon until crispy, then remove and set aside.
  3. In the same skillet, add olive oil and cook sliced onions until caramelized.
  4. Add garlic and thyme, cooking until fragrant.
  5. In a large bowl, combine chicken, orzo, beef broth, and the onion mixture. Season with salt and pepper.
  6. Transfer the mixture to a baking dish and top with cheese and crispy bacon.
  7. Bake for 25-30 minutes or until the orzo is cooked and the cheese is bubbly.
  8. Let cool for a few minutes before serving.
