Ingredients

  • 2 cups heavy cream
  • 1 cup brewed espresso
  • 1/2 cup brown sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 6 egg yolks
  • 1 teaspoon gelatin powder

Instructions

  1. In a saucepan, heat the heavy cream and brown sugar until warm.
  2. Whisk in the espresso, vanilla, ginger, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk the egg yolks.
  4. Gradually combine the warm mixture with the egg yolks.
  5. Return to the heat and stir until thickened.
  6. Sprinkle gelatin over the mixture and stir until dissolved.
  7. Pour into molds and refrigerate until set.
  8. Once set, unmold and serve.

Notes

  • For extra flavor, add a dollop of whipped cream on top.
