- 200g pitted dates
- 250ml boiling water
- 75g unsalted butter
- 100g brown sugar
- 2 large eggs
- 200g self-raising flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 200ml double cream
- 100g dark brown sugar
- 50g unsalted butter
- Preheat your oven to 180°C (356°F).
- In a bowl, soak the pitted dates in boiling water for 10 minutes.
- Blend the soaked dates until smooth and combine with butter and brown sugar.
- Add eggs and mix well.
- Gradually fold in flour and baking powder.
- Pour the mixture into a greased cake tin and bake for 30-35 minutes.
- For the toffee sauce, melt dark brown sugar with butter and double cream over low heat until thickened.
- Serve warm with toffee sauce poured over the top.
