Gordon Ramsay Sticky Toffee Pudding

  • 200g pitted dates
  • 250ml boiling water
  • 75g unsalted butter
  • 100g brown sugar
  • 2 large eggs
  • 200g self-raising flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 200ml double cream
  • 100g dark brown sugar
  • 50g unsalted butter

Instructions

  1. Preheat your oven to 180°C (356°F).
  2. In a bowl, soak the pitted dates in boiling water for 10 minutes.
  3. Blend the soaked dates until smooth and combine with butter and brown sugar.
  4. Add eggs and mix well.
  5. Gradually fold in flour and baking powder.
  6. Pour the mixture into a greased cake tin and bake for 30-35 minutes.
  7. For the toffee sauce, melt dark brown sugar with butter and double cream over low heat until thickened.
  8. Serve warm with toffee sauce poured over the top.

Notes

  • Serve with ice cream or whipped cream for an extra treat.
  • Can be made a day ahead and reheated.
