Gordon Ramsay’s Tiramisu

  • 6 egg yolks
  • 3/4 cup sugar
  • 2/3 cup milk
  • 1 1/4 cups heavy cream
  • 1 cup mascarpone cheese
  • 1 cup espresso, cooled
  • 1/2 cup coffee liqueur
  • 24 ladyfinger cookies
  • 2 tablespoons cocoa powder

Instructions

  1. In a bowl, whisk together egg yolks and sugar until pale.
  2. In a saucepan, heat the milk until warm, then gradually whisk it into the egg mixture.
  3. Cook the mixture over low heat until it thickens. Remove from heat and let it cool.
  4. In a separate bowl, whip the cream to soft peaks, then fold in the mascarpone.
  5. Combine the cooled egg mixture with the whipped cream mixture.
  6. In a shallow dish, combine espresso and coffee liqueur.
  7. Dip each ladyfinger into the coffee mixture briefly, then layer them in a dish.
  8. Spread half of the mascarpone mixture over the ladyfingers, then repeat the layer.
  9. Chill for at least 4 hours before serving.
  10. Dust with cocoa powder before serving.

Notes

  • For a stronger coffee flavor, use more espresso.
  • Letting the tiramisu sit overnight improves the flavor.
