- 2 cups cooked quinoa
- 1 pound chicken breast
- 1 teaspoon olive oil
- 1 teaspoon oregano
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup kalamata olives, pitted and halved
- 1/4 cup fresh parsley, chopped
- 1 lemon, juiced
- salt to taste

- In a bowl, combine olive oil, oregano, salt, and pepper. Add the chicken breast and marinate for at least 30 minutes.’
