- 1 pound boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ cup feta cheese, crumbled
- ¼ cup red onion, thinly sliced
- ¼ cup Kalamata olives, pitted and sliced
- 1 lemon, juiced
- In a large bowl, combine olive oil, oregano, garlic powder, salt, and pepper. Add the chicken thighs and marinate for at least 30 minutes.
- Preheat grill or skillet over medium-high heat. Cook the chicken for 5-7 minutes on each side or until fully cooked through. Remove from heat and let rest.
