Ground Beef Enchiladas

  • 1 pound ground beef
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 cups shredded cheese
  • 8 corn tortillas
  • 1 cup enchilada sauce
  • 1/2 cup chopped onion
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook ground beef and onion until browned.
  3. Stir in chili powder and cumin, then add half of the cheese.
  4. Fill tortillas with beef mixture, roll, and place in a baking dish.
  5. Pour enchilada sauce over the top and sprinkle with remaining cheese.
  6. Bake for 20 minutes or until cheese is melted and bubbly.
