- 1 pound ground beef
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 2 cups shredded cheese
- 8 corn tortillas
- 1 cup enchilada sauce
- 1/2 cup chopped onion
- 1/4 cup chopped cilantro
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef and onion until browned.
- Stir in chili powder and cumin, then add half of the cheese.
- Fill tortillas with beef mixture, roll, and place in a baking dish.
- Pour enchilada sauce over the top and sprinkle with remaining cheese.
