Hearty Cheddar Garlic Herb Potato Soup Recipe

A comforting and creamy potato soup infused with garlic, herbs, and cheddar cheese.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onions and garlic until translucent.
  2. Add potatoes and vegetable broth, then bring to a boil.
  3. Reduce heat and simmer until potatoes are tender.
  4. Use an immersion blender to puree the soup to your desired consistency.
  5. Stir in heavy cream, cheddar cheese, thyme, and parsley; cook until cheese melts.
  6. Season with salt and pepper to taste, then serve hot.

Notes

  • For a thicker soup, blend more of the potatoes.
